Huevos Rancheros

They are warmingly bold that makes breakfast feel like a masterpiece. They are corn tortillas topped with ranchero sauce and fried eggs. This is a hearty Mexican dish that translates to Cowboy Eggs because it was a mid-morning meal eaten by cowboys in Mexico. It originally had a different name but was renamed by city folks once they discovered it.

Huevos Rancheros are served with refried beans. If you get this dish in northern New Mexico, you’ll also see it served with calabacitas, a squash and corn dish, red chile or green chile in place of the ranchero sauce, and often whole black beans in place of refried beans. The beauty of making them at home is you can mix and match the different regional variations to have just what you like. For me, it’s ranchero sauce, refried beans, and calabacitas

If you’ve been following along with me for awhile, you might remember that my mom had a from scratch hot breakfast for us every morning after barn work and before school/work. Huevos Rancheros was one of my favorites and always made it a better day.

Huevos Rancheros Ingredients
4 green onions
2 Tbl vegetable oil (plus more for the tortillas)
1 Tbl minced garlic
1 Tbl flour
⅓ c water
2 tsp Better than Chicken Bouillon
10 oz Rotel
4 Tbl cilantro (divided), chopped
4-8 corn tortillas (1-2 per serving)
butter
4 eggs
salt

Huevos Rancheros Directions
Slice the 4 green onions. In a sauce pan, add 2 Tbl vegetable oil and heat it until it shimmers.

Add the sliced green onions and 1 Tbl of minced garlic to the oil. Quickly stir the mixture and let it sit until the onions are soft and the garlic is fragrant but not brown.

Add 1 Tbl of flour to the pot. Stir the mixture until the flour is smooth and shiny. 

Add ⅓ c water, 2 tsp Better than Chicken Bouillon, and 10 oz of Rotel. Stir. Bring the mixture to a boil then reduce it to a simmer for about 10 minutes.

You have two options for assembling. If you made a large batch of the sauce, dip the tortilla into the sauce and put it on a plate. Repeat with a second tortilla. If you make a single batch of sauce, it’s hard to dip the tortilla so put a little sauce on your plate, add the tortilla, and a thin layer of sauce. Top it with a tortilla and a thin layer of sauce. Add 1 cooked egg and add a generous coating of sauce. Sprinkle more cilantro on top.
